There is nothing better on a dreich morning than a cosy breakfast that is easy-peasy to make.
Fluffy pancakes are exactly that; easy-peasy and with the added bonus of having that wow factor!
This recipe is fool proof - even better! And versatile - what more could you want?!
I like making the batter up in the evening just before I go to bed, I keep it in the fridge and bring it out when I'm ready to cook in the morning. I always thank my foresight when I do this, it just always seems like so much more of a hassle measuring ingredients in the morning!
I love popping extra treats in the batter as I cook the pancakes, depending on what I have in the fridge that could be bacon, blueberries or even chocolate drops!

135g plain flour
2tbsp caster sugar
1 large egg
2tbsp cooled melted butter (or if you fancy being health then olive oil)
Topping Inspiration: Bacon, Maple Syrup, Blueberries, Strawberries, Honey, Greek Yoghurt, Cocolate, Cream... the list goes on! I wouldn't recommend them all together though...
Sift the flour, baking powder, salt and caster sugar into a large bowl.
Make a well in the centre adding the egg and 1/3 of the milk, whisk in gradually adding all of the milk, then whisk in the melted butter.
Beat the mixture - any little lumps will disappear with the whisking to stick at it until you have a lovely smooth batter! Then let it stand for a few minutes.
Heat a frying pan over a medium heat and add a knob of butter or a dash of oil. Once heated add a ladle of batter. Don't panic if it's thick - it should be like this! (If you want to add extra treats to the batter now is the time to do it!)
When the top of the pancake begins to bubble turn it over until both sides are golden brown.
Keep going until all of the batter is used up, I like to keep them warm in a low heated oven and serve the whole stack together with maple syrup, fresh fruit and icing sugar.
